Dinner Menu 12 The 27th Wedding Anniversary Edition

Last weeks dinner menu included a couple of items worth noting. When I was in Trader Joes looking for hotdogs I found TJ’s Spicy Chicken Sausage and TJ’s Pumpkin Pancake and Waffle Mix.

I loved the flavor of the sausages but they were a little too spicy for me. I will gladly buy the same brand just choose a different flavor next time.Two of them were served the first night on buns like I had planned. The third went into fried rice which was a good call. One was enough to add little flecks of delicious flavor. The fourth is going into this weeks potato soup.

The pancake mix however was wonderful. When first mixed  the batter looked a little thin, but by the time the skillet was heated the batter looked perfect. We loved both the flavor and texture of these. I will probably buy another box to have on the shelf to get us through the rest of fall and winter.

This weeks menu will be short as we are going to the ocean for several days to celebrate our 27th wedding anniversary!

Potato Soup-last of the salad, biscuits

Spaghetti, baked spaghetti squash,

Leftovers to clean the frige before being gone for 3 days.

Dinner Menu 11

Investing less than 30 minutes per week to plan out our meals has made life easier for me. This way I only have to think once about dinner for the week. Each night as I close the kitchen, I look at my plan to see if I should take anything out of the freezer. When it comes time to cook I just walk into the kitchen and start cooking.

Here is what’s for dinner this week:

Burgers and roasted potatoes

Lentil chili, cornbread

Pinto bean fajitas, rice

Hot dogs, potato salad

Veggie fried rice, noodles

Fritatta, veggies

Pancakes, fruit

You know the saying “Rice and beans and beans and rice”?

In 2008 the real estate market turned south and took our income with it. I was suddenly faced with the need to drastically slash my grocery budget and did not know how to do it. I would walk around saying “but I don’t know what to do with beans”. It was true. I did know how to order bean burritos from fast food restaurants and open a can of lentil soup, but did not know what people did with beans in their own kitchens.

Several years and hundreds of dinners later I finally know what to do with beans. For the next few weeks I am going to talk about different types of beans and what to do with them. Since my personal recipes are not in a publishable format I will include as many links as possible. This is the information I wish I had had in one place so long ago. Here is what’s for dinner this week:

Pizza, green salad (did not get to it last week)

Black bean burgers, corn and sweet pepper sauté (did not get to it last week)

I am feeling icky with some kind of headachy flu and will figure out the rest of the week as it unfolds. It is quite possible that a frozen lasagna will be purchased and maybe some fast food brought home.
