Everyone needs a few frugal meals that they can make over and over. I also think it is nice to know about how much they cost. The dollar amounts listed here approximate what these would cost to feed my family of four using today’s prices.  Here is the first set of 3 that I have made regularly throughout the years. Enjoy!

1. Roasted chicken, roasted potatoes and carrots, frozen peas

Cost: Chicken (only the amount consumed).$2.00

Cost: Potatoes, Carrots, oil and seasonings. $.40

Cost: Frozen peas. $.90

2. Seasoned pinto beans, sautéed cabbage and onions and cornbread with butter and honey.

Cost: Beans and seasonings. $.50

Cost: Cabbage, onion and cooking fat. $.1.00

Cost: Cornbread, butter and honey. $1.00

3. Chicken noodle soup and cornbread with butter and honey.

Cost: Chicken, onion, carrots, seasoning, and noodles. $2.oo

Cost: Cornbread, butter and honey. $1.oo

Dinner Menu 12 The 27th Wedding Anniversary Edition

Last weeks dinner menu included a couple of items worth noting. When I was in Trader Joes looking for hotdogs I found TJ’s Spicy Chicken Sausage and TJ’s Pumpkin Pancake and Waffle Mix.

I loved the flavor of the sausages but they were a little too spicy for me. I will gladly buy the same brand just choose a different flavor next time.Two of them were served the first night on buns like I had planned. The third went into fried rice which was a good call. One was enough to add little flecks of delicious flavor. The fourth is going into this weeks potato soup.

The pancake mix however was wonderful. When first mixed  the batter looked a little thin, but by the time the skillet was heated the batter looked perfect. We loved both the flavor and texture of these. I will probably buy another box to have on the shelf to get us through the rest of fall and winter.

This weeks menu will be short as we are going to the ocean for several days to celebrate our 27th wedding anniversary!

Potato Soup-last of the salad, biscuits

Spaghetti, baked spaghetti squash,

Leftovers to clean the frige before being gone for 3 days.

Each night as I close the kitchen, I look at my plan to see if I should take anything out of the freezer. When it comes time to cook I just walk into the kitchen and start cooking.

Here is what’s for dinner this week:

Burgers and roasted potatoes

Lentil chili, cornbread

Pinto bean fajitas, rice

Hot dogs, potato salad

Veggie fried rice, noodles

Fritatta, veggies

Pancakes, fruit

Dinner Menu 10

Each night as I close the kitchen, I look at my plan to see if I should take anything out of the freezer. When it comes time to cook I just walk into the kitchen and start cooking.

Here is what’s for dinner this week:

Black bean burritos, rice (did not get to it last week)

Pizza, green salad (did not get to it last week)

Black bean burgers, corn and sweet pepper sauté (did not get to it last week)

I am feeling icky with some kind of headachy flu and will figure out the rest of the week as it unfolds. It is quite possible that a frozen lasagna will be purchased and maybe some fast food brought home.
